Fresh and Grey water tanks in a Westy

I've never had a vehicle with all the fancy bits that my Westy has. The whole running water in a vehicle is a complete unknown to me.
Is it safe to cook and drink the water that comes out of my tap? I filled the fresh water tank with my garden hose connected to my kitchen tap. Is there anything I need to do to make it safe to drink? Is it okay to leave water in there for any length of time? Do I need to drain it frequently? Can I only drain the fresh water tanks by running the tap down the drain inside the camper?
What do I do with my grey water? Can I just let it drain down the street drain in front of my house. Its just drain water from washing hands and doing dishes.
Also. I was a litle surprised to find my grey water tank empty after running water down my sink drain during the weekend. I didn't see it leaking at all. I wonder where the water has gone.
Any other tips for managing fresh and grey water in my camper?
