FRESHWATER TANK!

Hi all
Hopefully you can help me!! I have a California Westie and I think I may need a new freshwater tank.
Does anyone know how easy it is to replace this? I have had a look and it looks like i may need to remove the top of the cupboard to get to it which looks like a job in itself'!!
Also can anyone tell me what the anti-freeze thingy on the control panel does.
