Re-Covering Cupboards

Our van is a 1984 Holdsworth hightop. The interior looks pretty sound and solid but has one major problem. The previous owner decided to paint over the 1980's retro wood look cupboards with a nice shade of dog sh*t brown gloss paint!!!
Don't want the hassle or expense of replacing the whole interior and was wondering what to do. Thought about trying to remove the paint but this would probably lift the original laminate. Don't want to re-paint it as i quite like the idea of the woodgrain look. So waht about laminating on top of whats there already? Has anybody done this and if so where do I start? what do I buy? and how does it all work?
