Both of the items you mention are likely to draw a lot of current, working on the principal that a microwave is probably at least 600W it will draw 50A when in operation. It can be done but you would need some VERY heavy gauge wire to supply that sort of current. What sort of power is the coffee maker??? To boil water quickly it should be at least 500W. If you were using both of these appliances you would probably get somewhere in the region of 2hours operation out of your 2x100AH batteries. You would also need to be doing a fair amount of driving to recharge the batteries if you weren't hooking up to the mains at all.

One thing worth noting is that leisure batteries aren't really designed to provide very large currents therefore their life expectancy would probably be shortened somewhat.
All that said though, with the right cable and fuses yes it could be done!
