I have a 2.1 dj that i'm going to replace my 1.9 with, this has an 'oil cooler' between the oil filter and the block, can i remove this and run it the same as my old engine and if so which parts do i need to interchange.
Cheers.

you would be advised to keep the oil cooler, and add the extra peice of water pipe........ but the answer to your question, is yes, you can, just unscrew it. i wouldnt tho

as long as you keep the 2.1 water pump, yes, just "t" in for the outlet, which shouldnt be hard, presuming you have the metal shaped pipes from the oil cooler still on the 2.1 .

If the device were removed, would it seriously affect the oil temp?
I rather think its an oil warmer for colder weather starts...

It does both. It heats the oil using the water when the engine is cold and cools the oil using the water when the engine is at running temperature, when the water is cooler than the oil.

They make a big difference in lowering oil temps but do little for warming it up.

PM'd yer Shep..
It may help with warming a bit, but it does help oil temps when hot, but it doesnt control the oil temps in hard worked situations.. something to be aware of if you drive hard or are in hotter climates...
