2.0 CU Single Carb

Hi folks,
Recently bought a 2.0 Aircooled van called custard.
We bought it with a broken engine, a recent rebuild gone melty, sadly for the previous owner.
Anyway, i have been rebuilding a different engine with and it is pretty much read to drop in.
My concern now is that i have been reading about the single weber carb that is on the van. Suggestions of them causing some lean running and ultimately overheating the engine. The carb is brand new, he fitted it this year.
Now, as this has previously happened to the poor van, i don't want cause a similar thing to happen.
Have people had many issues with the single carb on a 2.0? If so, what sort of jetting do you have in yours? As i could check whether it has been suitably upjetted.
I did get the original solex carbs in a box with the van, so potentially *could* rebuild those. Although i have read that their main drawback is the the throttle spindle wearing, which obviously i won't be able to repair myself. Is there a recommended refurbisher?
Ideally, i'd like to keep the single on their as it is newer and will be less worn. But i don't want to munch the engine!
Any help guidance appreciated.
