Advice on restoring cupboard top

Hi all
Our counter tops have faded a little and the varnish has peeled off somewhat on our t25 transporter moonraker.
We are looking to sell him so just need to tidy it up a bit. I’ve sanded them a little to make them a bit more uniform. Intending to re-varnish but just a bit worried it might make them look even more patchy/marbly (having tried it at a small area at the back). It might be that there is still some varnish left on but not sure how far I can sand them back. I initially thought it was a veneer but maybe it’s plywood or something. Any thoughts appreciated on how best to treat them . Thanks

Looks like ply to me. Use 120-100 sand paper to clean up. Thin down first coat so it really draws into the wood then re-coat and should be fine
