AAZ Engine number 2 head gaskett.

I thought my learning curve was going to level out for a bit..... No such luck!
So I have found the time to get the spanners out and tackle the head gaskett on my replacement engine, which unfortunately battled me from day one. (See previous post)
I have got as far as trying to remove the head bolts which with no amount of persuasion will not shift.
(To satisfy my curiosity I revisited my original engine and they came undone comparatively easily)
I used my breaker bar and even with a piece of pipe to extend it they just wont move. I am nervous I am going to snap them. Any suggestions?
Second question:
Head skimming.... I have found lots of conflicting information. Any thoughts or actual experience?

VW say cylinder head must not be resurfaced.

As for experience, bought a Golf with an AAZ that (I learned later) had been skimmed, found impact craters in the pistons! New head and pistons, she now runs beautifully.
