For anything major like that i'd recommend the Bently manual. Costs more than the Haynes manual but it appears to be written by someone who has actually worked on these vans....
To be honest it's a fairly straight forward thing to do. Just strip off as many of the ancillarys as you can from the top. Raise up the rear, undo the engine and then it just slides then lowers out. As always the longer you take to prepare things the more painless the process. Mark up all the cables and pipes with letters and arrows and stuff to show where they all go and you'll save yourself a load of time when you're putting the engine back in.
