Pierburg 2e3 Rebuild

Good Evening all,
I am about to order the Carb rebuild kit from Brickwerks in order to try to fix the stalling issue in my van at low revs, (i've checked fuel hoses and vacuum hosed for leaks and replaced where needed).
My question is, is it a straightforward task once I get the kit, will it be fairly self explanitory for someone with fairly good mechanical skills. I heve rebuilt carbs in the past for a motorbike, but had a step by step guide with high quality pictures to follow.
I've looked on the wiki, and there is some great information on there, but is there anything in particular I should be wary of before starting this. Once its connected back up, should the setup be easy enough to do, or a bit of a bugger. I have an Ultrasonic cleaner to use for cleaning all the parts too before reassembly.
Any advice or help would be much appreciated, I use Doreen as my daily driver, so the less time she is off the road the better,
