I would suggest fitting a flexible hose to the outlet pipe and fixing the other end pointing downwards fastened with a 'P'clip to hold it in place. A simple non-return valve could be added to the end of the flexible pipe to prevent anything getting into the tank.

My Holdsworth Vision doesn't have an underslung water tank but has it mounted in the cupboard under the cooker. It is filled via access from the boot and drains from a tap under the nearside rear wheel arch. It also has no vent pipe/overflow as it spills out onto the engine hatch if overfilled.

It might be an idea to look around for a scrap bit of shaped heater type hose with a right angle bend in it in order to avoid kinking a straight bit of hose as you bend it over the side of the tank. Just a thought.
