Could anyone give me the ETOS part number for the little cylindrical inserts that go into the top of the seats to secure the headrests in place and allow them to be raised and lowered?

If you mean ETKA and for the driver seat headrest, not caravelle rears, then it's probably:-

811 881 939 - Guide for headrest, detachable (8/87 7/92 01C Satin Black)

443 881 743 - Retaining Clip
