I have just purchase and installed some white dial vinyl stickers.
They were only £5.00 and £1.50 p&p
I found them very easy to fit and complete with good instructions.

The company recommended two tea spoons opposite each other and prise them off. This seemed to work well without damaging anything but don't force them just take it easy. Mine seemed to pop off pretty quickly.
Replacement is just pushing it back on with the needle just resting on the stop.

Looks great
Have you tried it yet? when I did mine the needle went back on the other (wrong) side of the stop, lining up with a mark on the side of the original dial (you can see the mark on the bottom edge of the dial on your first photo)
I rested it against the stop on my first attempt resulting in a reading of 20mph at walking speed

How strong is the adhesive on these - does it look like the stickers will peel after a while, or, at the other extreme, is it so strong that it's likely to damage the existing markings if you peel them off? And what about the thickness of the vinyl - are the existing markings raised at all, and can you still see them through the vinyl surface?

The vinyl is pretty good. You cannot see the existing marks once fitted. The sticky on them is good too, it wouldn't damage the original instruments if you need to remove but not sure how long they will stay stuck being inside a van with temperatures raising and falling. Only time will tell but for £6.50 I think it's worth the chance.

I have hot some blue LEDs from a German co on eBay.
I would recommend camper van culture ones as they are recommended on other forums. I don't know if the have any UV tho but the ones I have make the needle glow in the dark.
