Why would my 2.0L Aircooled engine sometimes eject oil out of the dipstick tube?
It doesn't happen all the time, normally when I've pushed the van a little hard.

Normally signs of crank case pressure. Check your Crank Case breather to see if it bunged up. If it is clear you may have a major problem on your hands
And make sure you are putting the correct amount of oil in and not over filling

Yeah, it used to do it on my Fiat 900e camper van too. I unblocked all the breather hoses and pipes with carb cleaner and a wire coat hanger to get the solid gunk out. Take care not to hole the pipes though. I also adjusted the tappets which were miles out, and this cured it, although your tappets are hydraulic and can't be adjusted as such. There is a set up procedure according to the Haynes manual to adjust them after any sort of rebuild.
