Still kangerooing and cutting out....but.....

As some of you have read, my van's engine has been a pain in the rear end for a while now. When it runs fine, it purs like a cat and is great, but then all of a sudden will kangeroo and stall.
So far I've changed the fuel tank and all the lines and filters, stripped and cleaned the carb and put new plugs and leads etc in. Changed the oil and filter too.

Anyway, I have found what I'm hoping could be the issue. I've been looking at the intake side of things and noticed the rubber boots on the manifold to the carb were looking a little old (got the single Weber conversion fitted). So I decided to remove the carb, manifold and header pipes to check all gaskets and rubbers. Once off it was obvious the gaskets on the pipes to the block were knackered. All hard and brittle, so two new gaskets required there then. Then the rubbers came off nice and easy, but once off I noticed that the side you can't see when fitted was worse than I thought. 3 out of 4 had split half way round so weren't sealing at all!
I'm also replacing the gasket bewtween carb and manifold just to be safe. So hopefully once I've fitted new gaskets and boots, fingers crossed the stalling etc will go away!!!

Aaaaarrrrrrrgggggggghhhhhhhh!!!!!!!!!!!!!!!!!!

New boots and gaskets fitted. Put everything back together again and went to fire her up. Took a couple of goes as expected, getting fuel into carb, but then fired up like a good un. Was a little rough, but I'm guessing the mixture will need fettling again cause everything is sealed now. But then after about a minute it cut out. Tried firing up again and it took about 20 goes. Fired up ok and ran again for about a minute. This time I was round the back holding the revs on by hand just a little. Was holding them steady and then it cut out. It seems to take a big breath in and loses all power and cuts out. I'm now at a loss as to what it could be. I wanted to check the timing but I cant get it to run long enough!

Any ideas would be gratefully received
