can i remove my azz engine and fit a subaru engine and what would i need for it

Yes you can
I’ve changed a few engines but all diesel to diesel or petrol to diesel never the other way around,
The one main thing you will need without sounding “arsey” is the ability to use Google
.
Absolutely all the info is out there, often in extremely detailed form way too lengthy to reproduce here, I would check , Samba, Brickyard and since your looking the scooby way RJES.
