Fuel Supply ?

In March 2011 a local garage converted my 1.9 petrol (water cooled) from fuel injection to a pierburg carburettor - this was after ten years of intermittant problems with the injection system and a whole amount of money trying to get it sorted. Thankfully since the pierburg has been fitted and conversion complete my van has been 100% reliable however....it is very "flat" when starting off in first gear and you need to play around with the excellerator / clutch to pull away. Also when in top gear you can feel as is the engine is intermittantly loosing power and almost spluttering. Prior to the above conversion being carried out I recall some one saying that it wasn't as straight forward to change from injection to carburettor as you would have to change the fuel supply / change fuel tank??
As I have said on here before I am not a mechanic !!
If any one has any ideas I would be very grateful - to me my camper feels like it may be a fuel supply problem??
