Maybe a sticking thermostat ?

If there's not air in the system (checkout bleeding the cooling system via the rad bleed in the Wiki), then as above, thermostat could be the culprit, depending on type.

If there's air in the system and it keeps coming back, then could be head gasket. The garge will presumably pressure check and sniff the water for signs of CO

I have had air in system for some while and have bled the system many times, had check yesterday and garage say system is gassing up. Back to recon garage again - still under warranty!

we had htis problem when we first got the van. the previous owner had put the wrong coolant in. eventually this had led to a build up of a sandy type residue in one of the pipes, thus causing a block and hence overheating. worth checking you have right coolant in and no blocked pipes etc.... we cleared ours with a wire coathanger.... well, steve shaw did it actually :-)
