I used to use them. They give good clearance for working underneath. Best advice I can give is stop before you drive off the end. That's about all you need to know.

so would you just inch up them in first -
and stick handbrake on at top?

No you'll just knacker the clutch. You've just got to go for it. At least that's what I found. Don't worry about it. Its easier than you might think. If you're reversing on, angle your mirror down so you can see the back wheels. If you're driving on forward stick your head out the window or open the door.

I stick chocks under the wheels also for extra peace of mind. I have never driven off them yet, your wheel drops into the dip and hits the rear stop. Easy to feel once you have done it a couple of times.

Yep as above. Mine is up on them now. Just go for it going on and chock the other set of wheels

Another "Yes" vote for ramps here.
Top tip - if you find the van just tries to push 'em away, get a strip of old carpet, and loop it around the bottom rung, so that you drive onto the carpet first, and you can't push it forward. Kinda like standing on your shoelaces.

I was reading through thread and was about to post that this was biggest problem and that you should get the wife and / or kids to foot the ramps as you drive on!
Can't believe I have never heard this before. The wife would like to thank you for that tip!
