I'm not saying that it's the best 'cos I'm not an expert, but I used insulation made from recycled plastic bottles and a little thermo wrap.
as it's made from plastic, it won't hold water; it doesn't make your skin itch when you put it in; you can stuff it into all the hard to reach places and it doesn't smell. I tested it with a flame (before I put it in) and it doesn't burn either....

and the best bit is that its on special offer at B&Q at the moment at £7.50 per roll

Have been reading through a couple of lt conversion blogs today. One bloke used the recycled plastic bottle stuff to insulate the walls in the over-cab area at the front of the high-top, and 25mm Celotex to line the rest of the van and roof.

I used LSP 507 3/4 inch ACOUSTIC thick closed cell foam type stuff stuck onto interior panels. Its designed for insulation and sound absorbsion and will not burn,if ignited it turns to dust and does not smoke. Ab out 30 quid for a 6x4 sheet i think. Made by a plastics moulding company near bexleyheath LONDON.

I've settled for the recycled plastic bottle matting option. If my van falls apart I'll let you know.
