Thanks for all the feedback, as soon as i have a spare day (Sunday) I will do some more tinkering. I will try the local vw breakers for the right hoses and take it from there, I look forward to a challenge!! Look forward to the 24mpg at some point in the future if all goes well.

Here's a photo of our's when it was a 1.9 showing the 2 choke hoses (arrowed) ..
Obviously having been a 2.1 your's doesn't have the 'Y' shaped hose going from the header tank to the pump pipe and to the choke(2.1's don't have a carb or therefore a choke like that), it will just be a small 'S' shaped one instead.

It's doable
I got exactly that during our trip around France. We did 1,800 miles, about half LPG and half petrol. I monitored MPG pretty accurately and got an average for the whole trip of 24 on Petrol and 19.5 on LPG. That was of course a mix of motorways (~65mph) towns and mountain roads. DG power by the way.
p.s. I didn't realise "doable" was a real word

24 mpg is what I got from our syncro with a rebuilt DG. If you're not getting in the 20's on petrol then the motor is probably well past it's best...
Anyhoo, I managed to swing a bit of tinkering time today and gave the carb a quickie in-situ refresh with a Brickwerks kit. Photos and blurb to follow but the bottom line was that the hesitation was all down to a damaged acceleration pump valve. I'll get it drafted and post up in a bit.

Ironically the part-load running was even worse for the carb re-furb. So I went hunting for leaks. Again.
It occurred to me that I hadn't checked the hot air pick-up hidden and forgotten behind the o/s rear light unit, that has a vacuum unit that might have failed and be leaking air. It isn't. Fully functional. er I mean
OK carb off, strip down again before the gasket welds the top & bottom together. There's only one place left for a leak that could have been worsened by external cleaning...with the hefty throttle spring removed (those cams were tight on the spindle!) the primary spindle was found to be like a broom handle in a bucket. The bushes were shot, spindle only 0.002" wear.
I found some 5/16" x 7/16" x 1/2" oilite bushes and got the job done, along with spot-facing the body to get a skinny washer under the cams, to limit the end-float to virtually nothing. That will not leak air!
All back together tomorrow, you'll be the first to know...

I found some handy bushes on some old scrap Epson printers - two of which are now the bearings for my weather vane!

They is the biz dem oilites Ian, I still have a good few flanged 1/4" ones from making a shedload of proper hang-points for Microlights... the first UK Trikes came with a 1/4" bolt through a very basic 'U' bracket of 1/8" steel, which bolts wore frightening oval holes in said bracket . Never knew one failed, but prospective aviators (or usually their wives) were not exactly 'assured' by our blandishments on the subject...

Well if it doesn't behave after all this I'm at a loss. A pair of HIF4's are waiting in the wings for manifolds to be welded and then I'm going to play "guess the needle"

Lots, lots better! Still not perfect, maybe 95% performance but considering it's jetted for a standard 1.9, not too bad at all. Decided to leave the timing at 5 degrees BTDC. Vacuum advance definitely doing it's job.
New spindle bushes were a tad tight toward the WOT end, they conspired with the dry throttle cable to give a couple of "off-the-end" rpm moments when changing gear
All well and sorted now after a bit of wrangling and lots of teflon lube spray, engine still happy after the rude awakening
