dipstick, oil pressure light and temp guage all there to help you monitor it, but if it's a drip every fifteen minutes sat on the drive it's likely to be more when hot and running. Usually when you are dropping oil you have a spotted tailgate, if you can't see out of the rear window then stop :rofl , sorry but again you can use a judgement on how much the loss is by how filthy the rear of the van is after x miles. How long since oil change ? You should see the evidence on there.
So what oil filter do JK sell ? If you haven't got the box anymore it should be on the filter and still readable now.

Bit late coming in on this, but I've been away for a bit. Thought I'd add this for future reference.

The o-ring you're looking for is part number 021 101 269A, available from http://www.vw-classicparts.de for 3.50 euros plus 8euros P&P. The cover plate is 021 101 267A (4.00 euros). I had to replace mine recently cos it had been whacked off a rock while the van was being driven off-road and was leaking badly -

There's b*gger all above the plate except the bottom end of the dipstick.

The two M6 bolts have copper crush washers. Tightening them up will only help if the leak is coming from the bolts themselves - the o-ring seals against the vertical faces of the cover plate and the surrounding recess.

Anyway, hope you got it sorted.

New oil is thinner than old oil, so it finds all the little gaps to get through. Might be the sump gasket, most of them leak a bit after an oil change. Just top it up now and then when it gets low. Think of it as a running transfusion.
