Yep, sorry if I was blunt and passive aggressive. I could see the good intention, but as they say: "The road to hell is paved with good intentions".
There are many threads about setting hydraulic tappet preloads on WBXs, but still we usually get a couple of misleading air-cooled type posts, and it can easily confuse the OP. Hence my uncharacteristic patience failure. Soz.

Still not starting.
Tried when I got home from work, still nothing. Starting to feel like there's something else wrong. Currently crying into my last can of Stella.

What else did you do since it was running ok ? Retrace you’re steps , go back to basics .... spark, fuel , compression = explosion

Will it start on LPG (assuming you can force an LPG start - not sure what system you have)?

It actually started on gas, after a few attempts and ran nicely, so I flicked it over to petrol to make sure it still ran and it stalled and hasn't started since.
It's fitted with a OMVL open loop.

So, check on lpg again, if it will run on lpg you have a petrol issue .....

It doesn't run on LPG.

First test for a spark, then:

1.Ignition on,
2. switch to LPG,
3. ignition off,
4. press and hold button whilst turning ignition on, when yellow LPG light stays on steady you've forced it to start on LPG,
5. turn engine over until it starts. If you release the key, you'll need to do 4 again.

Or...If you have the old rocker switch, ignition on, switch from LPG to petrol and instantly back to LPG, this forces an LPG start.

Let us know how it goes.

Just managed to have a quick half an hour on the van. We have spark and it will 'force' start on LPG, but won't run on petrol. Could only get as far as confirming the fuel pump has power and works. Thinking I must have disturbed, broken, pulled out something that is needed. Thank you all so much for your help so far. Try again tomorrow!

If you wound them in 1.5 turns from touching they will definitely not be set correctly as there should be a gap between them...

Mis-information is as bad as no information.
Hydraulic lifters require preload.

Just pulled the injectors out and they spray fuel. But still it will not start or run on petrol.

Dare I chance to proffer for (fear on ridicule) that if the valves are being held slightly open for some bizarre possibly - pilot error kind of reason, that a compression test would tell the tale. Or maybe simply turning it over by hand could show if compression is lacking. Although my 2.1 WBX has had me going a few times over knocked off or forgotten connector etc.

When I was adjusting the tappets (on more than one occasion) there was definitely resistance and couldn't be turn over without effort. I'm starting to think it's something daft, but hard to find or something major like the AFM or ECU.

You mean you found it hard to turn the engine over at about 4 points per revolution ? Compression ?

So to be clear here , you can make it run on lpg , ticks over , revs all as usual ? But won’t run at all on petrol ?

Look for broken connection on the control wire from the lpg switch over , engine bay end
