I suppose much would depend on how big the ioniser was but the little 12v ones seem to work fine given the space it has to cover. Naturally you're going to get some circulation of air as a camper is not a sealed box - nor would you want it to be but most of the air outside is going to be higher in negative ions anyway. With the doors shut, the air in a camper is relatively static unless you've got a rust bucket or rotten seals. Its a bit hard to explain unless you've used one but reminds me of fresh mountain air or the smell you get during a lightning storm.

I work in an an environment where I'm surrounded by computers and the opposite is true and frequently find myself standing out the back to get some fresh air otherwise I get sleepy. One of the known benefits of negative ions is being more alert. I've not had chance to test it with cooking smells but I'm told it clears those two as cooking smells are also airborne particles. The one on my desk at home (as I type this) seems to work best with a small USB fan blown across it. Its not a warm day so opening the window not too welcome but its a similar atmosphere with the ioniser going, without losing heat from the room.

I don't get hayfever so much now after years of eating natural honey, but the first one I bought in the 1980s (at considerable cost I remember) was brilliant at clearing pollen from the air during the height of the season. I'm not sure how much effect gaps in a space effect them but providing it packs a punch, it will likely overcome any losses unless you've got a door wide open - which probably answers your question. You can buy negative ion readers but they're very expensive.

In comparison to dehumidifiers which remove moisture (got a big one at home) where a fan is an intrinsic part of the mechanics, you'd be effectively tyring to dry the air from outside the camper as well. With an ioniser its a more static environment unless you had the sliding door open. Obviously the closer you sit near it, the more noticeable. Its also totally noiseless. For the price they are, I'd recommend experimenting with one. The power consumption is so ridiculously low.
