You might like to consider Staron solid surface. (Fleabay) It's made of recycled phone cases, and comes in 13mm thick sheets, which are ideal thickness. You can machine it with carbide woodworking tools to very fine tolerances, it will take a thread or small self tappers for fixings, and you don't have to edge band or lip it.

I used it on my "other" van and it's been great.



Disadvantages are that it's quite heavy, and I got a nasty reaction to some of the stuff given off during machining. My advice is to work outdoors.

Saw a pile of stainless steel worktops in a skip the other day but decided they might be a tadge cold if you accidentally got your feet near it during the night. Plus cutting it not so easy at home, and again heavy. The only other thing I could think of was shuttering ply coated in an epoxy resin to seal it. Might pay me to play around with different surfaces and see what stands up to the rigours of camping and changes in humidity. Domestic worktops no good at all.
