Still not quite right. Now I remember the intake air temp sensor in the inlet elbow
Which has a SA "22S" part number
I delved into ETKA and discovered that the 2.6 uses the T4 2.5 fuel rail assembly, but for the life of me I cannot find an inlet air sensor
Guess I will have to ask at the 'yard...
PS the air sensor part is 22S 919 521, I have used Golf 3 parts before (e.g. throttle pot) but not sure about this sensor. It has a barbed connection and plugs into the rubber inlet elbow from the air filter.

I still think you should check the fuel pressure, also try different fuel the wife's v5 passat doesn't run too well on tesco fuel, slight stumble on tick over and goes flat just as you pull away it's fine on esso fuel.
These SA vans sound much like the pre obd abf lump I fitted in a mk1 golf years ago, every time I phoned up for a sensor I got told it didn't exist or that part numbers not on the system.

Ok thanks for the advice. The FP regulator isnt too dear and was used on loads of things up to Eos and not expensive, the air temp sensor is also popular and cheap.

Might be worth checking the voltage at the pump as well, had a mk2 golf with only 10.5v to the fuel pump when running, after that was sorted I had to remove the stack of shims that had been added to the pressure valve in the metering head.

That's a whole other problem! The pump has been noisy(ish) for years but once again its got a strange 22S part number and has a JT plug (as opposed to stud terminals) which doesn't help matters.
It is a Bosch, just not a familiar one.

No its the same as any wbx efi in that regard, the pump is a subtle variant of the usual Bosch unit.
PS mot the other day revealed 50ppm HC and 0.4% CO so it is defo too lean at idle, also a little bit "flat" performing but cruises nicely at 70mph.
