If it were mine I think I would be putting the thicker radiator in and going from there

It's not a case of the water pump impeller slipping on its shaft? Once up to a certain temp the grip has loosened enough to be useless, hence all being good when cold. Just musing.

No expert here, and trying to remember an article that I have read recently. It pertained to problems caused by a water pump that should be driven one direction such as by the back of a toothed belt being fitted to a vehicle with a v belt, resulting in the pump being driven in the wrong direction. I'll cut the waffle, just check that your pump is turning the right direction.
