Ever seen the oil temp gauge in an original Audi GT coupe or a Mk1 GTi?
130*C is middle of the scale and it reads to 170...
Thats pump discharge temp btw

In petrol (gasoline) engines, the top piston ring can expose the motor oil to temperatures of 160 °C (320 °F). In diesel engines the top ring can expose the oil to temperatures over 315 °C (600 °F). Motor oils with higher viscosity indices thin less at these higher temperatures.

I have one of the 170deg Audi gauges in my SA 2.5 bus, when I fitted it (tested with sender it showed 100deg in boiling water) using the high oil pressure switch location it ran at around 120deg, going up to 130deg on a motorway run. At the moment I have a sump mounted sender and it doesn't go above 100deg.

The standard oil temp sender location on the 5-cyl is in the bottom of the front cover/oil pump, on the left hand side near the crank pulley.
But we digress...
I wonder if a foreign body has found its way into the sandwich cooler water connections and has blocked it? They are 10/11mm hoses though, would have to be a chunk of gasket or a big blob of silicone thats become detached

I'd take coolant pipes to oil cooler off and check coolant is flowing through it, maybe got clogged up after tge coolant was changed
^^thats my thinking which is why I say check coolant flowing through oil cooler
metal link pipes are probably closer to 8mm bore

Given it's proximity to the water pump I very much doubt the oil cooler will be blocked
