Should be all-metal self locking nut, e.g. stover or binx type (tri-lobed/ovalized top collar or "split" top)
All of the steering gear uses this type of nut for a good reason.
Use once only.

I am planning on doing this but more information on size (length) of the bolts and nuts required would be great.

The first (toolstation) one is just a plain thin nut that is synched over the top of another nut to bind it against the thread, and so probably isn't suitable as its effectiveness depends too much on how it's installed.

I would have thought either of the other two would be suitable as they will lock onto the thread of the bolt whether torqued up correctly or not, and so keep the rack in place even if it rattles.

I have now done this job and as above it is fairly easy to do with the rack hanging down. I didn't drive the van onto ramps this would of made it easier. There is more info here: http://www.thesamba.com/vw/forum/viewtopic.php?t=438134 Just make sure the steering lock doesn't come on when you at trying to refit the rack and you spend ages wondering why you cannot get the rack in the right position!
