Okay so i reconnected the loose cable and watched the choke flap open as the engine warmed. All seems ok. Took the van up the road and if i push it to fast through the revs it just stops and then suddenly flies! Park back up at home and the revs are still high. Could it be a blocked jet? The old petrol tank was awfully grubby but there are two filters in the system.

When the duct is off...
Engine off
Get an operative to depress the accelerator,
You will be looking inside the throat for a squirt of fuel from the transfer jet, as the pedal is depressed (hold the choke flap open).
If you have a good squirt of fuel then we can move on to the next probability
...and you only need one filter by the tank, what VW intended

I did wonder why there was two... When the engine was idling earlier there looked like dribbles of fuel being injected below the butterfly. Should this be a nice neat fan? As it just looked like a dribble...

So looking down the choke flap with the engine off, When the throttle is pressed, there should be a nice clean jet of petrol? What do i NOT want to see?

Should it be a fine mist of fuel? Or a mass flood? Or does that make no difference?

Right, managed to check it tonight and there is a nice squirt of fuel, took the van out whilst it was cold and there was no problem at all even when i really hammered it (dont normally push it until warm) soon as it warmed up it started to hesitate and idle fast again.

OK to me it's now a fuel issue... It seems to me when the mixture is rich (choke on) there is no problem.
Once the choke comes off (around 6 mins) it starts to lean out
A lean mixture will cause a hesitation (Partial stall)
pressing the acc. slowly allows the fuel mixture to be detonated all be it with reduced power.
The only thing to stop me putting money on a small air leak into the inlet side...is the fast idle, as air leaks reduce the idle speed.
I would get the mixture checked, see what the CO, O2 and HC reading is when the engine is warm.
