As an aside if i was in the situation of having a single carb engine with a duff carb i would look at having the original carb rebuilt.

Which as you will have found in your search is my advice to peeps in that predicament.

Webbers seem to have developed some kind of Olde Skool mystique ... I remember them new (particularly in Escorts and Granadas) and they were always thirsty beasts usually used to drag power from an otherwise merely adequate engine. Also a very good engineer chum tried fitting one to his DG and despite VERY good and thorough support by Webber themselves it never did run properly and he now has a Pierburg back on and £450 'worth' of shiney Webber sat in a box.

The most shocking aftermarket fitment of them was when replacing the Ford VV. I set loads of them up at the time that had just been "Fitted" Saying that you could have used a hosepipe, funnel and a straw and it would be better than a VV

And greater economy than the Webber if you poured it straight in out of a bucket

ahh but just for a bit of clarity dual twin choke webers idf or ida work a treat. its the single pierburg replacement or the solex replacement on cus that are proper pants.
the op did say carbs.....

Yes Jason but he also said he wanted a 30+ MPG setup.

well set up dual twins are more efficient than a single carb but nothings gonna give 30 plus mpg!!
