ave a good look around the site as this has been asked a few times already - it's quite doable but you need to make sure you have all the bits!

Easiest way is to buy a scrap diesel van and use it as a donor. There is lots of bits you will need. You don't need a diesel gearbox, just the bell housing . But if you are fitting a tdi you will have to fit longer gears to get the best out of it.
You got a lot of work ahead, especially going from air-cooled

Depends on ETDi or MTDi. Just a few bits to think about.

Bell Housing
TDI input shaft, clutch and flywheel
Diesel engine bars, mounts and rubbers
Jx sump or convert N/A sump
Jx exhaust manifold
Jx exhaust and down pipe
JX Air filter canister
Charge cooler and oil cooler (maybe)
Engine bay water hoses
Longer 3rd and 4th
JX Inlet manifold (MTDI
diesel loom (MTDI)
Diesel throttle cable (MTDI)

As Lloyd said you are better off with a doner vehicle. But If you want to buy a job lot of bits, I have a N/A diesel westy I can strip for a lot of what you need.
