Wet oil pressure test completed and they're all fine.  Also drained and changed oil - and I've promised never to use synthetic as a top up ever again.  Mechanic has checked the switches and believes the fault (as you have all pretty much predicted) is a wiring issue somewhere at the front end.

Just about to contact auto electrician.

This is ongoing and wearing me out a bit.  Explained the issue to auto electrician.  He worked on it for a while and concluded that he couldn't find the problem.  So I'm stuck with constant oil light and I still have to bang the top of my dash to get the petrol gauge to work (intermittent fault).

There was a good blopgpost about the different oil pressure switches with the description of the warning system on the Brickwerks page, cannot find it now, it seems like Simon removed it.

There's a detailed troubleshooting guide in Bentley which is available online, see post in General, and the wiring diagrams are also on Syncrosport website and most of the same stuff is on Sir Adventure website as well as what is in Haynes manual.
And I have a bunch of bod circuits in stock both petrol and diesel if it proves to be the bod circuit

my guess is damaged foil circuit at the multiplug where it is folded over the tab and the rev counter signal is t'eed off on some circuits - or it's had a Chinese made dash repair circuit fitted or otherwise been repaired and the repair has broken down, banging it isn't a permanent fix, but relieves a bit of frustration

Here is the current one - some of the links pointing to it from old forum posts etc may have been changed over the years but a lot of the info is still there if you search under the tech heading. VW T3 Oil Pressure Switches
