It just gets better...
Went to pick up van tonight and took it for a little test drive around industrial estate going lovely until I pulled up put it neutral and the noise returned.
Left it idle and then pressed accelerator a couple of times and it cleared so thought I would try and limp it home.
Noise returned at idle and again went away after pumping accelerator, got out the van to check engine and noticed a new coolant leak dripping from water pump.
Quick Google and forum search seemed to suggest not risking the drive with a leaking pump incase of catastrophic failure so pulled it up back at garage and posted the keys and note to garage.
The saga continues

Re: Metal in the injectors
Thought I would give another update if anyone comes across the same issue.
I had to replace the water pump which wasn't too bad although after taking it for a run and trying to bleed radiator it seemed to be pretty much full and coolant came out straight away!?
The noise remains but only very intermittent and if I jam the accelerator it seems to go away within 10 to 15 seconds. It also only occurs in lower gears.
I still intend to replace the fuel tank but was advised by a different garage to just dump some injector cleaner in it so I could take out in next few weeks.
Took it for a 70 mile round trip today and had the noise twice while just setting off and once on way home all below 4th gear.
Most I've spoke to in person seem to think it's just injector being stuck open now and again but got holiday booked in the next 2 weeks so going to just live with it until then and then take it to be looked at by vw specialist. I just can't bear the thought of refitting the injector lines again!
