I want to wire something in to the dash area so that it only works when the ignition is on - is there any such thing as a "usual" place to do this on a T25? I'm sure I could find somewhere to splice off, but i'm making an effort to do things properly at the moment! it's a low power device (small lcd monitor) and I always fit an inline fuse if it's not wired to a fuse box.
Oh and it's a 1983 van with the early fuse box.

Yep, run a test meter along the fuse box with everything off, testing each in turn. You should find one that is always live which powers internal lights (note which one it is) but everything else should be dead. Then test again with ignition key in first position. You'll then know which connection is live with ignition on.
