I used to use a cab bunk, with another "bed" underneath - turned the passenger seat (slide off runners way), made a ply board that sat over seats, with a large cushion on top.

The board had a notch cut out so was narrower over driver seat (leg area) and wider over passenger seat. Used a few times just on own when only had one kid, cost about £5 for the wood, made in 20 minutes
