Coolant warning light. Ideas please.

Hi all.

Got in the van this pm. Fired her up as usual. However this time the coolant level warning light stayed on and was flashing. I stopped turned her off and checked all the various water bits ie expansion tank water reservoir etc. All were fine. I fired her up again and the light continued to flash. I decided to drive it home slowly and see if it got hot or another problem presented. After about 5-10 mins the light stopped flashing. I then drove alittle further and stopped to get ciggies. Got back in started her up. No flashing light. Bizarre. Anyway I've just got home and checked the levels etc again and there is no apparent issues.

Any ideas on why the light stayed on and flashing for so long.

poor connections to the header tank switch
switch prongs are fugged up with crud
failing switch
AGG 2.0L 8V. (Golf GTi MkIII)
