it's only a guess but I'd say that would be a right p.i.t.a cos its not just cupboards, its cooker, sink and fridge too. (and possibly heater if you have one). If the bit under the cupboards is ok can you cut around them?
is it all rotten ?
could you get away (for this summer) with just cutting the rot out or even the wood up to the units and fitting a new piece , then rip it all out in the winter
its only a patch about a foot square in front of the cupboards, im trying to think of a way of chopping out the rot and filling the hole before i put the new floor covering in.
a 1 season fix will do for now.

circular saw set to wot ever the depth of the flooring is ..then a jig saw for the edges on top of a piece of say 2x1 so that the saw blade does damage the van's steel floor

Nail-on stops
Set depth
Plunge and cut clockwise
Cut and insert new board
Go for it
