Planning a trip around Europe

Hi guys,
The wife and I are in the very very very early stages of planning a trip around Europe next year for 2-3 weeks in our T25.
Now.....having never driven on the mainland this will be a pretty big adventure so any advice would be very welcome. I may be way way out on time scales about how much we can take in so let me know your thoughts.
I live in Folkestone so the tunnel or the ferry is a very short hop I will be classing the moment I step foot on Europeon soil as the very very start. Once off the other side my plan (in the loosest term) is this. Turn left and head to Amsterdam then onto Wolfsburg in Germany for the VW museum, carry on down through Germany to Europa Park, Rust (we like a good them park and waterpark).....then continue down to Italy (possibly take in a trip to Venice), hook a right along to Monaco as I love F1 and would love to drive the circuit. Nice, France is the next stop over near the old town then up through France onto Ypres in Belgium to learn a bit of history, then finally back to the Ferry/Tunnel.
It totals approx 2500 miles through seven countries in 2 or 3 weeks.
Any thoughts, hints, tips, advice and wisdom would be good.
