vw t25 fuel gauge and heater gauge

Hi ther can any one help I just drove back from St ives and my fuel gauge was playing up I just changed sender before I went so can't be that ? And my temperature gauge started flashing and went in the red all way home then went back down from one side to the other but it ran fine ?? Any ideas is it possible to change the fuel and temperature gauge on dash ?? How do you take the binical off thanks colin 07786037474
