I want to reaplce various pieces of headlining etc in my '83 Westy, especially the piece in the cab area thatis removable. Any ideas on how easy, what sort of material etc?

As for materials, the choice is yours, proper headlining stuff from somewhere like www.woolies-trim.co.uk or pretend leather vinyl.

Its not to hard to replace with some leatherette, but you will need the support bars.
Put a loop left to right on the side that will be against the roof and slide the bar through.
You will also need the plastic cups to go into the holes that the bars will sit in on both sides of the van.
The leatherette pulls nice and tight into place and looks quite good.
We did this on our old van and the result was pretty good.
