I’m sure that this has been discussed many time but.....

Will moving from 14 to 15 inch wheels destroy the drive chain? Will it make the speedo police friendly?

No, doesn't matter what size your wheels are, it's the tyre diameter that affects your Speedo.

Going from 185/82/14 road tyres up to 215/75/15 AT2 did two things:
1. Speedo was now 100% accurate to satnav speed, so no room for error.
2. The 6% increase in gearing was more than the DG could cope with on the hills. The DJ could pull it easily.

Exactly this. Wheel size is really only relevant in terms of tyre choice. For example, you're more likely to find an all-terrain type tyre for a 15" than a 14" wheel, whereas tyres for 14" wheels tend to be more road types only.

What’s the “accepted” AT tyres for say, shallow mud and wet gravel. I’m looking to find secluded camping pitches in snowdonia and the lakes.

The best 'All Terrain' tyres are generally held to be either Cooper or BF Goodrich, although there have been some good comments about the General Grabber tyres. It will probably come down to your budget in the end and what sizes are available.

There are also a few people on here who rate the Yokohama Y354 as a decent 'on road' tyre with reasonable 'off road' performance, so something like that might be a better bet if you choose to run a single set of tyres.

Make sure you give some consideration to what silverbullet said about gearing in his post above. If you make a big jump to a size that is the maximum that physically fits your van you may find it's too much for your engine and that you'll always be struggling on hills.
