Should be no harm in having an extra , surplus to requirements fuse .
If you could take a clear picture of the fusebox i would be able to say if your connections are ok.

2 amp fuse seems very delicate ,maybe prone to nuisance blowing causing a breakdown, I think 7.5 or 10 amp would be better, the wiring looks sufficient to take that.

It is a picture version of chinese whispers.
If you get a picture that is slightly-off angle, it is easy to mis-understand what is being said / shown.
Not a telling off, but we would all be totally wrong if we thought that something looked less than safe, and then did nothing about out.
I would expect the same if / when I do something questionable. - although I hope my O.C.D. acts as a first line of defence in that respect.
It does all look clean, tidy and well laid out.
If I was being a real fanny, then I have to admit that I hate crimps with rigid plastic covers.
I am a crimp, solder and heat-shrink sleeve freak myself. (Double sleeved on higher power stuff).
But - I see lots of professionals use them, so they cannot be all that bad.

The fuses are in parallel as i suspected. Both would have to blow for the circuit to be become disconnected in the event of a fault. It would take approx double the current !
Normal to link at the incoming terminals as you have done at the top but the outgoing at the bottom need separating or all connected to one fuse only.

According to Bentley, the expected wire for that part of the circuit is 18swg.
That is a rating of 7 amps per wire.
As you have two wires, this is doubled to 14 amps.
As you are running 2 x 2 amp fuses - total 4 amps, that is still well within the safe limit of the wires.
But is still quite unorthodox / odd to do it that way.

I am not sure exactly which set up you are running...
But -
I suspect any specific manifold heater / auto choke set up will require a 5 amp fuse.
Although on really early vans, there was no fuse at all.
And the electric fuel pump also requires it's own 5 amp fuse.
Based upon the Haynes book of confusion.(3452)
Your wires look more than capable to cope with the current demands of the circuit(s).
But -

I didn’t want to upgrade to 8mm fuel line as I’d just replaced with 5.6 a few months ago, you can get the pump with smaller adapters included if you hunt about. Also installed the pump on some high density foam to reduce noise. Also used a one way valve near the carbs too... after replacing the ignition switch as well, the van is almost clawing to get off the drive

Trouble starting the van with the electric pump on.
Unplugged and poured a thimble of petrol in the carb and it starts okay. Even when I reattach the power to the pump it cuts out, its like the engine is getting too much fuel.
Any thoughts guys, off a few days next week and was hoping to move it to do a bit of welding.
