Running lean really shouldn't affect coolant temperature?
Maybe it's a thought to replace your radiator? I know it's yet more money, but I did it last month and I am very pleased with the results. Mine looked very similar to yours...mounts rusty, bottom of rad nasty... If you have time it's not technically a big job - four bolts to drop it, decouple the wires, drain the coolant. I took the time to de-rust, zinc and repaint the mounts, plus rusty bits on fan shroud etc.
I used to run with a temp gauge about 3/5s. Now it barely hits 1/2. Here's a few pics of what mine looked like.
Course this may not solve your overheating problem...

I think your dead right about changing the rad. I think the more things you do on the cooling system the more stuff ends up clogging in the rad and it may also be leaking. My son's nursing it round Scotland at the moment but when he gets back it's new rad first then new tank.

Running increases engine running temperature so there fore the coolant temperature. Fact.

Further to running lean.
I've just been reading another post where a stainless exhaust was fitted causing the engine to run lean. I'm assuming through better airflow but the carb needs re- jetting to suit. I have also fitted a second hand stainless exhaust which is bigger bore and tubular so definitely better airflow.
Would anyone know how to re jet a pierburg.
New radiator
New tank
And Session on rolling road is all I need to cure my overheating.
Any thoughts again would be appreciated.

And a nearly new fuel tank. Your fuel cap will also need replacing, as it's technically now an MoT failure.

Some good instruction videos and manuals for overhauling the pierburg https://siradventure.files.wordpress.co ... repair.pdf. New seal kit isn't expensive. To be honest I can't remember if you can access the ...wait - yes you can access the wee cone shaped fuel filter - it should be where the fuel line from the pump attaches to the carb. You should be able to gently pull it out and then check what crud may be in it.
