I replaced both of my rear brake slave cylinders prior to last MOT as they were leaking, I found it near impossible to adjust the cog via the rear backplate access so therefore adjusted the pads with drums off with a bit of trial and error, got through the MOT fine.  No lip on drums so made it easier, had to remove drums on and off between adjustments.
