On reading your original post I was going to suggest checking for drum wear but that's already been covered. You might also check rear wheel bearings since wear there will allow the drum to be out of parallel with the backplate and shoes meaning potential for only the edges of the shoes to contact. ...

As you have a multivan, do you have the buddy seat behind the front passenger seat?
If so, you could use what's sold as a forward facing child seat in the rear facing position.

Thanks guys. general opinion seems to be that it may be possible but very difficult to get the pedals out with the dash in place but that it is not too big a job to take the dash out. This is probably going to turn into a complete 'under the dash' refurb - pedals, servo, heater box, wiper mech, etc....
