On petrol, are you sure it’s only on petrol? Its not unknown for dual fuel systems to run on both when they should only be on one , admittedly it normally petrol not shutting off totally and adding some petrol through on LPG , but its worth checking .  Switch the lpg off and run til the engine stops...

We have those eco-worthy ones on our narrowboat, they are too tall to fit in the seat boxes, but i think they will fit on their sides …….  Check the dimensions

Reading through this , first thing that calls out to me is mixing mineral and synthetic will do no favors ……
secondly , the low pressure light only comes on above 2000 rpm , and in the first instances when engine is up to temp and after slowing from a warm run. 

What carb ? If its a 2e3 check the cone  filter in the inlet spigot if you have checked the main ( and should be only) filter by the tank outlet .

Did you change the push rod for the fuel pump at the same time as changing the pump? Must be 100mm long .

What age van , fuse boxes are early and late , so cannot answer without knowing 

Sat in the drivers seat reach up above your right knee under the dash the 14pin loom plug for the dash cluster is reachable , give it a push and a “jiggle” 
if that wont make any difference , as has been said above , take the top off the dash pod and investigate that way down 

You will just scare yourself with an oil pressure gauge , save your self the pain …….

Have you tried running a temporary wire from the engine bay to the dash ? Old wires become high resistance internally with constant hot cold and vibration , i had a similar issue with main beam tell tale years ago, ran a replacement wire and stopped the dim confusion  might be worth a try for the sa...

Cheap nasty fuse ? Often really cheap fuses dont blow when they should , but 
Generally dirty ,loose , bad connections get hot , which makes them dirty , loose worse connections and the cycle only gets worse , hotter looser , melted . 

 you could have a chaffing issue on the wire elsewhere ?
