I went from a 2.1DJ to a Subaru EJ2.5 and the difference is totally 100% worth it. I'm not sure its as 'cheap' as you think it may be but our Bus is a keeper and I'm 100% pleased with all we've done with all the help we've had with some top chaps along the way [emoji1360] Not cheap to do it properly...

If you went the EJ2.5 route you can go to a 253 engine mark.

The speed tape is aerospace grade, its used to seal down instrumentation cabling inside of the engine undercowels and good for surprisingly high temps.
I used clear Sikaflex to bond the lenses back on, touch wood zero issues after a year.

We've got the 100w folding solar panel kit from Titan Energy which is great.
Keeps the leisure battery topped up even with the Waeco fridge running.
Worth a look I'd say.

The IP rated solar connections used for domestic and leisure systems are MC4 Connectors. Fleabay has plenty listed.
Battery end I've used a 50v Anderson connector.

Looks really encouraging, the only bits I couldn't get in the UK at the time for my ej2.5 conversion we're the short sump (maintaining the right oil capacity) and exhaust. I was lucky to be able to get both from the USA from Smallcar. If they're now available from this guy in the UK then that saves ...
