If yours is snapped, it can be welded together , they sometimes break where the grub screw is located.

What covers are on the seats ? The vinyl seat covers are not nice to sit on when cold, now the bulkhead is gone fitting a pair of later seats with velour type covers would be better.

DK is the common one for the 2 ltr Aircooled, ABD wont fit its for the later water cooled vans.

Try something easy first like clearing the filter of water then run the engine again and see if the problem comes back.

Its fixed wth concealed screws and spots of bonding adhesive, the headliner is easier to do with the Carat trim,no need to remove the windows either, if you google VW T3 Carat interior you will see the trim in place, its the german spec Carat not the USA version.

Is that a LHD van ? I have a complete Carat pillar trim kit that would sort out all that bare metal work, its the original factory kit in light grey and covers all the areas you have in your photos and continues into the cab and above the windscreen and comes with original sun visors in the same col...

I dont know why vw put them in the pipes, the original plastic is very tough, when doing a subaru conversion the rear pipe end is cut off and the rubber pipe is clamped on without problems.

You dont need to change the coolant type just use the same colour to top up .If the conversion was done correctly the subaru electrics should be compatible for the vw temperature gauge. Was the conversion done using RJES parts, show us a photo of the engine bay.

I would get a new battery, colder months ahead will affect an old battery and let you down, it will also rule out the battery as the cause of the starting problem.

Is your battery old, i had one that would play up like it was the starter ,it would turn the engine ok sometimes then nothing other times, i put a recon starter on and still had the same problem, a new battery sorted it.
