I am currently trying to find the hose that goes from the dalek cap, as I can't seem to find it on VW Heritage. That hose is not under any pressure, so any "rubber" (type) hose that will fit will do just fine. Your local motor factors will likely have summat suitable for very little money...

Not seen a switch like that either, i am guessing it isn't original as the t piece is held in by jubilee clips not the spring clamps the factory uses. Can you run the engine up to temp with the lid off and (carefully) look to see where the coolant is escaping from? The system should pressurise, alt...

I've upgraded the leisure battery and have not really thought about solar, although it's a good thought. I do have a little solar unit which just trickle charges the main battery when it is parked up, but doesn't do anything for the leisure battery.
